The Alaskan Bearing Sea, the Mid-Pacific Ocean, the West Coast of California, and the Atlantic Ocean are where our seafood sources originate -- around the world.
The Short Finned Pacific Mako Shark (the fastest shark in the ocean) is a bi-catch when fishing for Ahi Tuna. It is not threatened or endangered (per OSHAA), it is one of the few robust fishable shark species in the world. Sadly, Atlantic Mako are not fishable due to their threatened, or endangered (per OSHAA) classifications.
Ahi Tuna (aka, Yellow-Fin Tuna) from around Hawaii and the mid-Pacific, is used for the firmer, less fatty, darker meat than Blue-Fin provides for jerky.
The swordfish only live in the Atlantic and harvesting is governed by the ICCAT.
All our Salmon comes from the Bearing Sea, in Alaska -- including, Cedar-Smoke Keta (Chum) Salmon, and Sockeye Salmon (In a Salmon Candy style).
The Rainbow Trout comes from Canton North Carolina and is the oldest (since 1978) recipe we offer.
